I had a friend growing up whose mom was a Girl Scout leader. She made these very often at events. We loved them ! So this is one of the 3 treats I’m making for my treat boxes for my family this year for Christmas. The last few years I’ve been making treat boxes for my family each individually and they love it.
So here is the basic recipe. But I’ve found it’s not sweet enough so I add more powdered sugar until I get it to the desired sweetness that I want. If you like a more savory flavor then you can leave it like it is.
Peanut butter balls
1/2 cup of creamy peanut butter
3 Tablespoons of salted butter
1 cup of powdered sugar
Put peanut butter and room temperature butter in a bowl and blend until a dough is formed. Add the powdered sugar and taste. If it needs more peanut butter or powdered sugar just add those until you get the desired flavor you like. This is a very versatile recipe. Get a cookie sheet and line it with parchment paper.
Form the dough into 1 inch balls and place on to the cookie sheet. Place in refrigerator for 30 minutes to firm up. While those are firming up, melt one bag of semisweet or milk chocolate chips in a microwave bowl in the microwave. Take refrigerated peanut butter balls out of the refrigerator. Using a fork. Place a peanut butter ball on the fork and carefully dip each ball one at a time into the chocolate and place on cookie sheet lined with parchment paper. Immediately sprinkle with holiday sprinkles of your choosing on each one while still wet to make a festive treat. Place into refrigerator until ready to eat.
