Valentines Dinner

by Darla Youngblood

Valentines Day is coming soon! We all know trying to get a reservation at a nice restaurant is nearly impossible. So why not make a nice dinner at home and of course have a wonderful dessert!
I have a simple cheesecake recipe that’s no bake. Use 8 oz of cream cheese softened. You can put it in the microwave for 1 minute and that will work too. Blend cream cheese with a blender until light and fluffy. Add one can of Eagle Brand Milk and 1/4 a cup of lemon juice. Blend until smooth. Pour into 9 inch ready made graham cracker crust. Put lid on upside down and put in refrigerator at least two hours. Originally recipe called for cherry pie filling on top after refrigerator but you can add any flavor you like or it’s also delicious plain.
