I grew up in a small town of 2000 people in Oklahoma. We were close to a lake. So once in a while my mom and Dad had either a fish fry with fish and homemade hush puppies and invited their friends over. Or they would have a Mexican food party.

So in honor to the memories of my parents and friends I’m giving away my Dads secret recipe for beef enchiladas!

First scrabble one to two pounds of hamburger meat depending on number of guests. I always add onion to the hamburger meat as I cook it. Drain grease off hamburger meat. Buy a package of corn tortillas. Fry them quickly in hot oil just enough to soften. Put them on paper towels to soak up the grease. Take one corn tortilla, put in some cooked hamburger meat and some canned chili. Some canned chilis are spicy and others are not so choose the chili you like best. After adding chili add shredded cheddar cheese and roll from one end to another. Place in a large 13×9 inch pan. Pour remaining water downed chili over the enchiladas and add more cheddar cheese. Put in 350 degree oven till hot and cheese is melted. Serve with tacos, lettuce, sour cream, tomatoes and anything else you want for tacos. Also serve with a big pot of pinto beans cooked.

I have wonderful memories of these parties and playing hide and seek in the dark with two of the kids! No alcohol was at these parties just plain old good fun and laughter!
